This easy herbed pork tenderloin recipe will go with nearly anything and is a delicious, fast, and healthy "go to" dinner meal that doesn't require much thought, ingredients, or preparation.
Use a pan / skillet that can go straight from the stovetop to the oven, like cast iron. This provides a beautiful sear on the pork tenderloin and keeps the heat going as you finish it in the oven.
The oven will make the pork more tender than trying to cook the whole tenderloin on the stovetop alone.
Letting meat acclimate to room temperature for ~ 20-30 minutes before cooking will ensure more even cooking.

- ~1 ½ tablespoon mixed dried herbs or Herbs de Provence
- ½ tsp salt

I made this last night and it was quick and easy and very tasty.
For the herbs I used dried thyme and oregano, and a small amount of fennel seeds. In our oven, 13 minutes on convection roast was just right.
