Homemade Mayonnaise is one of my favorite things to whip up by hand. The only ingredients are an egg, vegetable or safflower oil, salt, a bit of mustard, and a bit of acid - like fresh lemon juice.
Some people use a food processor or blender for this recipe but I like to see and feel the dressing emulsify (combine) and get thicker as it's made.

Ingredients
- 1 large egg YOLK (no white)
- 1 Tbsp dijon mustard
- 1 cup vegetable or safflower oil
- 1 Tbsp lemon juice or white wine vinegar
- pinch salt
Instructions
- In a large bowl whisk together: 1 large egg YOLK (no white) and 1 tablespoon Dijon Mustard
- Very slowly whisk in ~ 1 cup vegetable or safflower oil
- When mixture is thick add: 1 tablespoon fresh Lemon Juice or white wine Vinegar.
