Lowcountry boil is perfect for a picnic, potluck, or laid back dinner party.
Throw in any shellfish that you like (crawfish, clams, crab) to a lowcountry boil. Below is the basic recipe.
Eat Low Country boil as is or serve with a variety of sauces: hot sauce, cocktail sauce, garlic butter sauce, or lemon wedges.
The "stew" (as in Frogmore Stew) is misleading because it's not stewy at all and is a bunch of cooked seafood, sausage, corn and potatoes drained from its seasoned liquid and laid out "picnic style" on a large table of newspaper. It's a "free for all" serve yourself.
Low country boil and Frogmore Stew are the same thing. Frogmore is a small community on the sea Island of St. Helena in Beaufort County, South Carolina. It used to be the actual name for all of St. Helena at one point and is also one area for the coastal African American Gullah Geechee community.
The Low Country (AKA Lowcountry) refers to (geographically) a low lying region off the coast of the Atlantic Ocean in portions of Georgia and South Carolina that includes sea islands and the coast line.

Ingredients
- 2lb smoked Andouille sausage, sliced into 1" pieces
- 2 ½ Tbsp Old Bay Seasoning
- 2 lb small potatoes, whole (fingerlings pictured)
- 8 ears corn, each ear cut into 3 pieces
- 2 ½ lb shrimp, peeled (optional) & deveined
- salt
Instructions
- Bring a LARGE pot of water to a boil (fill it ⅔ way so there's room for all the ingredients to eventually go in). If you don't have a large pot then you may have to use 2 pots. Generously salt (1 ½ tsp) the boiling water and add Old Bay seasoning, potatoes and andouille.
- Cook on a low boil uncovered for ~ 20 minutes or until potatoes are soft and add corn. Cook for ~ 2 minutes and add shrimp. Cook an additional 3-4 minutes or until shrimp are done.
- Drain and serve on a table covered with newspaper or kraft paper. Add sea salt to taste. Happy Low Country Boil Eating! Beckie
