Ingredients
- 1 lb (~2 cups) dried split peas
- 1 cup (~4 ounces) onions, diced
- 1 ½ cup carrots, small dice
- 1 cup celery, small dice
- ¾ tsp salt
- 8 cups vegetable broth
- 2 bay leaf
- ¾ cup parsley, chopped & divided
Instructions
Stockpot:
- Add olive oil to a large stockpot and bring to medium high heat.
- Add onions, carrots, and celery and a bit of salt. Cook covered ~ 5-7 minutes or until vegetables are translucent. Add more olive oil if it is dry and/or reduce the heat.
- Add remaining ingredients and bring to a boil.
- Reduce heat and simmer covered (stirring occasionally) for ~ 2 - 2 ½ hours or until peas are tender.
