Simple Pan Fried Zucchini Rounds

This fast and simple pan fried zucchini recipe is easy and crispy and has no flour.

Sear the sliced zucchini rounds in a pan for ~ 5 minutes until browned and caramelized and enjoy a healthy and amazing vegetarian side dish.

INGREDIENTS

- zucchini - olive oil  - salt - black pepper - optional additional herbs or spices

Slice zucchini into ¼ - ½ inch rounds.

Bring a nonstick skillet to medium high heat and add enough olive oil to lightly cover the pan.

Add sliced zucchini to skillet in one even layer and salt and pepper the top.

Cook uncovered and undisturbed for 2-3 minutes or until browned on one side.

Flip zucchini over and salt and pepper the second side. Cook ~2 minutes or until seared.
