Mexican Cole Slaw Dip ( Cabbage Dip )

This simple and easy Mexican cole slaw dip recipe is delicious eaten with chips as a dip or on tacos as a garnish. Spoiler alert - it tastes even better after a couple of days in the fridge!

Ingredients

  • 12 ounces packaged cole slaw mix (sliced cabbage, red cabbage, carrots)
  • 1 lime, juiced
  • 1 Tbsp olive oil
  • 1 tsp salt
  • pinch black pepper
  • 1/2 small jalapeno, diced - optional as garnish
  • cilantro - optional as garnish

Instructions

  • Place all ingredients (except jalapeños and cilantro) in a bowl and mix. 
  • This is best if you can let it sit for a couple hours and is good for a couple days.  I think it's best at ~ 1-2 days but it hardly stays around this house that long.
  • Garnish with cilantro and jalapeños.  Serve with tortilla chips or on your tacos.  Happy Eating!  Beckie

Notes

  • Speed the process along of the cabbage wilting with salt by leaving on the counter for ~ 30 minutes and stirring randomly.
  • Grab 2 limes if they are small or if your lime doesn't yield much juice.
