Variations on Mexican Cole Slaw Dip
This cabbage slaw recipe below was used with a pre-made cabbage mix to make it even easier.
When I made the instructional video I didn't have all the ingredients and substituted real cabbage for the pre-made mix. I also added jalapeños and chopped cilantro and used lemon juice instead of lime juice.
Never be afraid to modify a recipe, especially a simple one like this! Some other ideas are taco seasoning or a little mayo or sour cream stirred in.
Using a pre-made bagged mix makes this cabbage slaw recipe super easy. Looking for a mayonnaise based cole slaw? Check out my easy classic cole slaw recipe.
Easy Cole Slaw Dip Troubleshooting
Cole slaw dip needs to be soft and wilted to serve with chips.
Speed up the wilting process for the cabbage by salting the sliced cole slaw a bit. Leave it on the counter at room temperature leaving for at least 30 minutes to an hour and stir occasionally. Then add the remaining ingredients.
If your lime doesn't yield much juice then you will need 2 limes. Use lemon juice if you don't have fresh lime.
Serve Cole Slaw Dip with Chips
This cole slaw dip is based on one of my favorite Mexican restaurants in my hometown of Grand Junction, Colorado. It's a hole in the wall restaurant called El Tapitio and has the best carnitas.
They serve a Mexican cabbage slaw dip like this with chips and salsa. So delicious and even better after a couple days in the fridge.
