Pepita (Pumpkin Seed) Guacamole

This homemade guacamole recipe is simply the basics of avocado, salt, and fresh lime juice mashed together. Garnish guacamole with toasted pumpkin seeds (aka pepitas) for a simple and easy guacamole variation.

Ingredients

  • 2 avocado, skinned & pitted
  • 1 1/2 Tbsp fresh lime juice
  • 1/4 tsp salt
  • 1/3 cup pepitas (pumpkin seeds), toasted & chopped
  • 2 Tbsp pepitas, toasted and whole as garnish

Instructions

  • Bring a small skillet to medium high heat and add pepitas (no need for any added oil).  Keep 'em moving in the pan - they will burn fast once they start to cook.  They are done when they start to smell toasty and are barely beginning to brown and pop. 
  • Cool pepitas.  Reserve 2 Tbsp whole pepitas for garnish and roughly chop the rest.
  • Mash all ingredients, except pepitas, in a medium bowl.  Add in the chopped pepitas and stir together.
  • Add salt to taste and more citrus if you want it tangier.  
  • Transfer to a smaller bowl and garnish with whole pepitas. Serve with chips and salsa.

Notes

  • Don't want to turn on the stove?  Skip toasting the pepitas and throw them in raw.
  • Use a bigger bowl when mixing ingredients - that way you will always have enough space and will never get frustrated trying to thoroughly mix the ingredients.  You will also not create a mess on your countertop from the overflow of a small bowl.
