Easy Parmesan Turkey Meatloaf

This simple Parmesan turkey meatloaf recipe is moist and easy to make (no chopping at all!).  Mix all the turkey meatloaf ingredients together, form the ground turkey meatloaf into a rectangle, and bake in the oven at 375F for around 50 minutes.

Ingredients

  • 2 lb ground turkey
  • 2/3 cup (~ 2 oz) grated Parmesan cheese
  • 2/3 cup panko bread crumbs
  • 2 eggs, beaten
  • 2 tsp dried Italian herbs
  • 1 1/2 tsp salt
  • 1/2 black pepper
  • 2/3 cup ketchup - for basting & dippin'

Instructions

  • Preheat oven to 375F and line a sheet pan with aluminum foil.
  • Mix all ingredients together in a bowl. 
  • Form a loaf on the baking sheet.  It's gonna be sticky - try to make a smooth surface and sides.  Try not to taper the ends, make it more rectangular box like to cook more even.
  • Bake for 20 minutes.  Slather with ketchup and bake for another 30 minutes or until internal temperature reaches 165F and turkey is done.
  • If your crust is not bubbling and starting to caramelize, turn the broiler on low for 2-3 minutes (watching carefully) or until it's bubbling.

Notes

  • Make little mini meatloafs instead of one large one.  They are so cute in individual serving sizes and will cook faster.  Baste them 10 minutes in and check them after 35-40 minutes to see if they are done.
  • Gluten free?  Pulverize instant oats in the food processor to substitute for panko.
