This easy beef & vegetable stew crockpot recipe is filled with beautiful veggies: butterbeans, potatoes, okra, and carrots and is slow cooked for 8 hours while you do something else.

Ingredients

Units Scale
  • 1 1/2 lb red potatoes, skin on & chunked
  • 2 lb beef chuck roast, cubed ~ 1 1/2" pieces
  • 3 cups (~6 oz) okra, sliced
  • 1 1/2 cups onions, sliced
  • 1 Tbsp garlic, minced
  • 2 cups (~ 10 oz) butterbeans (or frozen peas)
  • 8 medium carrots (~1 1/4 lb), sliced & chunked
  • 2 Tbsp balsamic vinegar
  • 1 1/2 tsp salt
  • 1 1/2 Tbsp cajun seasoning
  • 1 Tbsp fresh rosemary, chopped
  • 3 cups beef broth

Instructions

Add all ingredient to crock-pot (potatoes on the bottom), stir, and cook on low for ~8 hours.  Add sea salt to taste.  Happy Eating! Beckie
