Easy Beef and Vegetable Stew In The Crockpot

The great thing about a crockpot is that you can throw any leftovers in and make an awesome beef stew or soup.

Crockpots get a "bad rap" for being crappy old school grandma recipes.  I'm here to tell you that crockpots are AMAZING and affordable and will save you time and money. They will also pop out a delicious dinner at the same time.

Make substitutions in this crockpot beef and vegetable stew recipe using up whatever vegetables are in the fridge or freezer. Try to get the amount of vegetable ingredients somewhat proportional to the recipe.

Don't have cajun seasoning?  No problem.  Wing it and use a blend of paprika, garlic powder, onion powder, thyme, oregano, and cayenne.

Wanna add a touch of richness and sweetness? Throw in a tablespoon or two of tomato paste.

  • Instant Pot – For quick cooking.  Sear or don’t sear depending on your mood & day.

Ingredients

  • 1 ½ lb red potatoes, skin on & chunked
  • 2 lb beef chuck roast, cubed ~ 1 ½" pieces
  • 3 cups (~6 oz) okra, sliced
  • 1 ½ cups onions, sliced
  • 1 tablespoon garlic, minced
  • 2 cups (~ 10 oz) butterbeans (or frozen peas)
  • 8 medium carrots (~1 ¼ lb), sliced & chunked
  • 2 tablespoon balsamic vinegar
  • 1 ½ teaspoon salt
  • 1 ½ tablespoon cajun seasoning
  • 1 tablespoon fresh rosemary, chopped
  • 3 cups beef broth

Instructions

  • Add all ingredient to crock-pot (potatoes on the bottom), stir, and cook on low for ~8 hours.  Add salt to taste.  Happy Eating! Beckie
