Ingredients
- 1 ½ lb red potatoes, skin on & chunked
- 2 lb beef chuck roast, cubed ~ 1 ½" pieces
- 3 cups (~6 oz) okra, sliced
- 1 ½ cups onions, sliced
- 1 tablespoon garlic, minced
- 2 cups (~ 10 oz) butterbeans (or frozen peas)
- 8 medium carrots (~1 ¼ lb), sliced & chunked
- 2 tablespoon balsamic vinegar
- 1 ½ teaspoon salt
- 1 ½ tablespoon cajun seasoning
- 1 tablespoon fresh rosemary, chopped
