Cumin Beef Stew with Sweet Potatoes

This tender slow cooked beef stew with sweet potatoes is slow cooked with cumin, oregano, canned diced tomatoes and beef broth. This beef stew recipe is cooked covered on the stovetop for around 2 hours.

Ingredients

  • 1 ½ Tbsp olive oil
  • 2 1/2 lb beef chuck roast, cubed ~ 1 1/2"
  • 1 small onion, sliced or diced
  • 1 Tbsp garlic, minced
  • 1 1/2 tsp dried oregano
  • 1 1/2 Tbsp ground cumin
  • 2 Tbsp balsamic vinegar
  • 16 ounces diced canned tomatoes with juices
  • 2 cups beef broth
  • 1 1/2 lbs cubed skin on sweet potatoes
  • ½ tsp salt
  • pinch black pepper

Instructions

  • Salt and pepper the meat.  Sear the meat first in a stockpot and set aside on a plate.
  • In the same stockpot: add onions and cook until translucent (~ 5 minutes).  Add garlic and cook 1-2 minutes or until fragrant.
  • Stir in cumin, oregano, and balsamic vinegar and cook 2 minutes.
  • Add tomatoes and broth, bring to a boil, and simmer covered ~ 1 ½ hours (stirring occasionally).
  • Add cubed sweet potatoes and cook around 30 minutes or until beef and sweet potatoes are tender.
  • Add salt and balsamic vinegar to taste.

Notes

  • Low on time?  Skip searing the beef.
  • Using a crockpot?  Cool - Add all ingredients into crockpot (put potatoes in first).  Set on low for 8 hours.  Add salt to taste. 
  • Instantpot: Salt and pepper the meat.  Sear the meat first and set aside.  Toss all ingredients into the pot and set for 45 minutes. Follow cool down instructions.   If time is low throw it all without searin'  & walk away.
