Cumin Beef Stew with Sweet Potatoes

This tender slow cooked beef stew with sweet potatoes is slow cooked with cumin, oregano, canned diced tomatoes and beef broth.

What Kind Of Meat For Beef Stew?

Use chuck roast for tender beef stews and pot roasts. Chunked meat labeled as stew meat could be anything that the meat department is getting rid of and may not be as tender as chuck roast.

This beef stew with sweet potatoes recipe is written to use chunked beef pieces. However, leave the chuck roast as a whole piece of meat if you prefer pot roast.

Having said that, I like beef stew with sweet potatoes cubed pieces of meat. The grocery store usually has pre cut chuck roast in the meat department making this recipe even easier.

Difference Between Beef Stew In Crockpot Vs Stovetop

This cumin beef stew with sweet potatoes recipe is written for the stovetop method. However, it can easily be adapted to the crockpot / slow cooker or instant pot.

What’s the difference between cooking in a crockpot or on the stovetop or oven?  Crockpots take longer but have less initial work. They also don’t reduce the liquid or concentrate the flavors as well as the stovetop or oven method.

Insta Pot users:  Sear the chuck roast first and set aside.  Toss all ingredients into the pot and set for 45 minutes. Follow cool down instructions. Throw in all of the ingredients and skip searing the beef if low on time.

Ingredients

  • 1 ½ tablespoon olive oil
  • 2 ½ lb beef chuck roast, cubed ~ 1 ½"
  • 1 small onion, sliced or diced
  • 1 tablespoon garlic, minced
  • 1 ½ teaspoon dried oregano
  • 1 ½ tablespoon ground cumin
  • 2 tablespoon balsamic vinegar
  • 16 ounces diced canned tomatoes with juices
  • 2 cups beef broth
  • 1 ½ lbs cubed skin on sweet potatoes
  • ½ teaspoon salt
  • pinch black pepper

Instructions

  • Salt and pepper the meat.  Sear the meat first in a stockpot and set aside on a plate.
  • In the same stockpot: add onions and cook until translucent (~ 5 minutes).  Add garlic and cook 1-2 minutes or until fragrant.
  • Stir in cumin, oregano, and balsamic vinegar and cook 2 minutes.
  • Add tomatoes and broth, bring to a boil, and simmer covered ~ 1 ½ hours (stirring occasionally).
  • Add cubed sweet potatoes and cook around 30 minutes or until beef and sweet potatoes are tender.
  • Add salt and balsamic vinegar to taste.

Notes

  • Low on time?  Skip searing the beef.
  • Using a crockpot?  Cool - Add all ingredients into crockpot (put potatoes in first).  Set on low for 8 hours.  Add salt to taste. 
  • Instantpot: Salt and pepper the meat.  Sear the meat first and set aside.  Toss all ingredients into the pot and set for 45 minutes. Follow cool down instructions.   If time is low throw it all without searin'  & walk away.
