This fresh lemon dill pesto recipe is made by blending dill with walnuts, olive oil, garlic, Parmesan cheese, and a wee bit of fresh lemon juice.

Ingredients

  • 2 cups (~ 2 oz) dill, tough stems removed
  • 1/4 cup walnuts
  • 1 large clove garlic
  • 1/4 cup olive oil
  • 2 Tbsp water
  • 2 Tbsp lemon juice
  • 1/4 tsp salt
  • 1/4 cup Parmesan cheese - optional

Instructions

  • Place all ingredients in a blender or food processor.  
  • Add more water, lemon juice, or oil if you want a thinner consistency.
