Easy Oven Roasted Broccoli and Broccoli Stems

This easy and simple oven roasted broccoli recipe is perfectly browned and brings out a sweet power punched rich caramelization taste.  Use the tender stem towards the top of the broccoli to make roasted broccoli stem coins.

Ingredients

  • 1 lb broccoli, softer stems sliced & florets chopped into bite size pieces
  • 2 Tbsp olive oil
  • 1/2 tsp salt
  • pinch black pepper

Instructions

  • Preheat oven to 425F and grab a 13 x 18 sheet pan.
  • Place the broccoli on the sheet pan and mix in olive oil, salt, and pepper.  Spread evenly on the pan, careful to not overcrowd (it will steam instead of roast if you overcrowd). 
  • Cook the broccoli florets uncovered 12-16 minutes or until you see the edges getting brown and it's cooked to your desired tenderness.
  • Remove the florets and continue cooking the stems for 4-6 minutes longer or until browned and/or desired tenderness.
  • Add salt to taste.  Happy Eating!  Beckie

Notes

  • Line your baking sheet with aluminum foil if you don't want to wash it after you're done cooking.
  • Most people only eat the broccoli florets.  Get more for your money and tastebuds and slice the softer stem and roast that too.
  • All ovens cook differently.  If your broccoli isn't browning then turn the heat up to 450F.  If it's browning too quickly but not getting soft then turn the heat down to 400F.
