Easy Roasted Broccoli and Broccoli Stems

This easy and simple oven roasted broccoli recipe is perfectly browned and brings out a sweet power punched rich caramelization taste.  Use the tender stem towards the top of the broccoli to make roasted broccoli stem coins.

This simple roasting method for broccoli at 425F is a standard temperature for most roasted vegetables.

Roasted Broccoli Variations / Additions

The roasting variation additions are endless. Try adding these ingredients to this basic roasted broccoli recipe:

  • herbs - fresh or dry rosemary, oregano, thyme...
  • spices- cumin, paprika, chili powder, red pepper flakes...
  • change the oil - try avocado, coconut, peanut, or sesame oil...
  • lemon juice or a dash of your favorite vinegar...
  • Parmesan cheese or feta cheese or cheddar...

Keep the broccoli stem coins separate from the florets as they will need to cook another 4-6 minutes longer.

Make Roasted Broccoli Stem Coins - Don't Waste!

Get more for your money and tastebuds and slice the softer broccoli stem and roast that too.

Peel the broccoli stem if it's too tough or just cut off the rough parts. I generally find that I don't need or want to peel it and just cook it a little bit longer than the broccoli florets.

Simple Oven Roasted Broccoli Tips - Know Your Oven!

The key to roasting is to know your oven. If this roasted broccoli recipe doesn't work, maybe your oven runs hot or cool.  Adjust the time or temperature if this is the case and put in the work to know your oven!

All ovens cook differently.  If your broccoli isn't browning then turn the heat up to 450F.  If it's browning too quickly but not getting soft then turn the heat down to 400F.

TIP: Line a baking sheet with aluminum foil if you don't want to wash the sheet pan after you're done cooking.

Serving Suggestion

Serve this Crispy Roasted Broccoli recipe with a farro salad to make a meal out of it, or as a side for the delicious coconut red lentils, crispy chicken thighs, or pork chops.

  • 2 and 3 quart bowls - I use these for everything, including tossing vegetables in oil/spices before cooking.  They have a flat bottom and are durable and stackable.

Ingredients

  • 1 lb broccoli, softer stems sliced & florets chopped into bite size pieces
  • 2 tablespoon olive oil
  • ½ teaspoon salt
  • pinch black pepper

Instructions

  • Preheat oven to 425F and grab a 13 x 18 sheet pan.
  • Place the broccoli on the sheet pan and mix in olive oil, salt, and pepper.  Spread evenly on the pan, careful to not overcrowd (it will steam instead of roast if you overcrowd). 
  • Cook the broccoli florets uncovered 12-16 minutes or until you see the edges getting brown and it's cooked to your desired tenderness.
  • Remove the florets and continue cooking the stems for 4-6 minutes longer or until browned and/or desired tenderness.
  • Add salt to taste.  Happy Eating!  Beckie

Notes
