Feta, Arugula, Tomato Salad Stack

Layered sliced feta on the bottom and then arugula and topped with ripe red tomato. 2 small plates. 3 stacks on each plate.

This simple feta, arugula, tomato salad stack makes an easy and quick snack, appetizer, or healthy salad recipe.

Ingredients

  • 1 lb block feta, sliced
  • 2 cups arugula
  • 3 tomatoes, sliced
  • e.v. olive oil
  • balsamic vinegar
  • salt
  • black pepper

Instructions

  • Lay 3 feta slices per plate.  
  • Add a couple arugula leaves to each piece of feta.  
  • Lay one slice of tomato on top of Arugula.  
  • Drizzle with olive oil and balsamic vinegar.  
  • Sprinkle with salt and black pepper to taste.  Happy Snacking!  Beckie

Notes

Feta's already got a lot of salt, so be careful with additional salt.
