This simple feta cheese, arugula, tomato salad stack makes an easy and quick snack, appetizer, or healthy salad recipe.
Hardly a recipe at all - just ingredients laying around and put together!
Layered and sliced feta cheese and ripe tomatoes and peppery arugula are drizzled with a fast vinaigrette of olive and balsamic vinegar.
Feta's already got a lot of salt, so be careful with additional salt.
Easy to eat when the days are hot, busy, and full of fun.
