Feta, Arugula, Tomato Stack

This simple feta, arugula, tomato stack makes an easy and tasty summer snack, appetizer, or light salad recipe.  Easy to eat when the days are hot, busy, and full of fun.

Ingredients

  • 1 lb block feta, sliced
  • 2 cups Arugula
  • 3 tomatoes, sliced
  • e.v. olive oil
  • balsamic vinegar
  • sea salt
  • black pepper

Instructions

  • Lay 3 feta slices per plate.  Add a couple arugula leaves to each piece of feta.  Lay one slice of tomato on top of Arugula.  Drizzle with olive oil and balsamic vinegar.  Sprinkle with sea salt and black pepper to taste.  Happy Snacking!  Beckie

Notes

Feta’s already got a lot of salt, so be careful with additional salt.
