Hardly a recipe at all - just ingredients laying around and put together!

Layered and sliced feta cheese and ripe tomatoes and peppery arugula are drizzled with a fast vinaigrette of olive and balsamic vinegar.

Feta's already got a lot of salt, so be careful with additional salt.

Easy to eat when the days are hot, busy, and full of fun.

Ingredients

  • 1 lb block feta, sliced
  • 2 cups arugula
  • 3 tomatoes, sliced
  • e.v. olive oil
  • balsamic vinegar
  • salt
  • black pepper

Instructions

  • Lay 3 feta slices per plate.  
  • Add a couple arugula leaves to each piece of feta.  
  • Lay one slice of tomato on top of Arugula.  
  • Drizzle with olive oil and balsamic vinegar.  
  • Sprinkle with salt and black pepper to taste.  Happy Snacking!  Beckie
