Soy Sauce Peanut Noodles

The Asian inspired noodle dish starts with angle hair pasta with a bit of garlic, sugar, soy sauce, and oyster sauce "umami".  Top it off with roasted peanuts.

Ingredients

  • 8 oz angel hair pasta
  • 1 Tbsp toasted sesame oil
  • 1 Tbsp garlic, minced
  • 3 Tbsp oyster sauce
  • 2 Tbsp brown sugar
  • 1 Tbsp soy sauce / tamari, regular or gluten free
  • 1/3 cup roasted salted peanuts, diced
  • 4 green onions, sliced

Instructions

  • Bring a pot of salted water to a boil.  Cook pasta according to package instructions or to desired firmness.  Drain and set aside.
  • Mix together the oyster sauce, brown sugar, and soy sauce.
  • Bring a large nonstick pan to medium high heat and add the sesame oil.  When hot, add the garlic and cook 1-2 minutes or until fragrant.  Add the strained noodles and the liquid mixture.  Stir to coat and cook until hot ~ 3-4 minutes.  Garnish with peanuts and sliced green onions.

Notes

  • "Dicing" nuts is difficult.  Place them in a ziploc bag and close the bag 95% of the way, squeezing out the air.  Take a big cooking spoon and pound the bag gently but firmly.  This will break up the nuts into pieces without making a mess.
  • Like It Spicy?  Add some sriracha or red chili flakes.
  • Want to make this a vegan / vegetarian dish?  Change the oyster sauce to hoisin sauce or look for a mushroom based oyster sauce.
