Soy Sauce Peanut Noodles

This easy Asian inspired soy sauce peanut noodle recipe base is angle hair pasta (could also use thin rice noodles) with a bit of garlic, sugar, soy sauce, and oyster sauce. Tossed with a load of roasted salted peanuts.

Top off tamari garlic noodles with some roasted peanuts and brighten it up in taste and look with fresh sliced green onions.

Want to make this a vegan / vegetarian dish?  Change the oyster sauce to hoisin sauce or look for a mushroom based oyster sauce.

Don't do soy sauce? Cool, try coconut aminos as a substitution. Coconut aminos is a soy sauce substitution that is gluten free, soy free, and has less salt.

"Dicing" nuts is difficult.  Place them in a ziploc bag and close the bag 95% of the way, squeezing out the air.  Take a big cooking spoon and pound the bag gently but firmly.  This will break up the nuts into pieces without making a mess.

Like spicy noodles?  Add some sriracha or red chili flakes.

Serving Suggestion

Serve these Garlic and Peanut Noodles with a complementary Asian inspired recipe like a salad or an appetizer, or pair it with a meat main dish:

The Asian inspired noodle dish starts with angle hair pasta with a bit of garlic, sugar, soy sauce, and oyster sauce "umami".  Top it off with roasted peanuts.

Ingredients

  • 8 oz angel hair pasta
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon garlic, minced
  • 3 tablespoon oyster sauce
  • 2 tablespoon brown sugar
  • 1 tablespoon soy sauce / tamari, regular or gluten free
  • ⅓ cup roasted salted peanuts, diced
  • 4 green onions, sliced

Instructions

  • Bring a pot of salted water to a boil.  Cook pasta according to package instructions or to desired firmness.  Drain and set aside.
  • Mix together the oyster sauce, brown sugar, and soy sauce.
  • Bring a large nonstick pan to medium high heat and add the sesame oil.  When hot, add the garlic and cook 1-2 minutes or until fragrant.  Add the strained noodles and the liquid mixture.  Stir to coat and cook until hot ~ 3-4 minutes.  Garnish with peanuts and sliced green onions.
