Homemade Mayonnaise is one of my favorite things to whip up by hand.  Some people use a food processor or blender for this recipe but I like to see and feel the dressing emulsify (combine) and get thicker as it's made.

Ingredients

Units Scale
  • 1 large egg YOLK (no white)
  • 1 Tbsp dijon mustard
  • 1 cup vegetable or safflower oil
  • 1 Tbsp lemon juice or white wine vinegar
  • pinch salt

Instructions

  • In a large bowl whisk together: 1 large egg YOLK (no white) and 1 Tbsp Dijon Mustard
  • Very slowly whisk in ~ 1 cup vegetable or safflower oil
  • When mixture is thick add: 1 Tbsp fresh Lemon Juice or white wine Vinegar.
