Homemade Mayonnaise

Homemade Mayonnaise is one of my favorite things to whip up by hand.  Some people use a food processor or blender for this recipe but I like to see and feel the dressing get thicker as it’s made.  This also enables you to determine when it’s the right thickness.  It’s also very simple to make once you get the hang of it.  Watch my video below to learn how to make mayo.

Ingredients

  • 1 large egg YOLK (no white)
  • 1 Tbsp Dijon Mustard
  • 1 cup vegetable or safflower oil
  • 1 Tbsp lemon juice or white wine vinegar
  • pinch sea salt
  • pinch black pepper

Instructions

Makes ~ 1 1/4 cups.  In a large bowl whisk together:

  • 1 large egg YOLK (no white)
  • 1 Tbsp Dijon Mustard
Very slowly whisk in:
  • ~ 1 cup vegetable or safflower oil
When thick add:
  • 1 Tbsp fresh Lemon Juice or white wine Vinegar
  • pinch sea salt
  • pinch black pepper
