Homemade Mayonnaise

Homemade Mayonnaise is one of my favorite things to whip up by hand.  The only ingredients are an egg, vegetable or safflower oil, salt, a bit of mustard, and a bit of acid - like fresh lemon juice.

Some people use a food processor or blender for this recipe but I like to see and feel the dressing emulsify (combine) and get thicker as it's made.  

This also enables you to determine when it's the right consistency.  It's also very simple to make once you get the hang of it.  Watch my video in this post to learn how to make homemade mayonnaise.

Ingredients

  • 1 large egg YOLK (no white)
  • 1 tablespoon dijon mustard
  • 1 cup vegetable or safflower oil
  • 1 tablespoon lemon juice or white wine vinegar
  • pinch salt

Instructions

  • In a large bowl whisk together: 1 large egg YOLK (no white) and 1 tablespoon Dijon Mustard
  • Very slowly whisk in ~ 1 cup vegetable or safflower oil
  • When mixture is thick add: 1 tablespoon fresh Lemon Juice or white wine Vinegar.
  • Add a pinch sea salt to taste. Happy Mayo Eating!  Beckie
