A little bit of this chunky and healthy mint, almond, & orange zest pesto recipe goes a long way.  Packed with flavor - garnish any dish with this recipe.

Ingredients

Units Scale
  • 2/3 oz mint leaves (this is the size of most packaged mint containers), stems removed & sliced
  • 1/3 cup (~ 1.5 oz) whole almonds, chopped
  • 1/2 an orange, zested
  • 1 tsp garlic, finely minced or smashed
  • dash of olive oil to your liking
  • salt to taste
  • black pepper to taste

Instructions

  • Chiffonade (thinly slice) the mint leaves.  
  • Chop the almonds or smash them in a ziploc bag by hitting them with the back of a large spoon.
  • Finely mince the garlic.  
  • Zest 1/2 an orange.  
  • Combine all ingredients in a bowl and add olive oil, salt, and black pepper to taste.

Notes

  • Don't want to hand chop the ingredients?  No problem - toss everything in a food processor and pulse lightly.
