Fresh mint and almond pesto is packed with flavor. Garnish any dish with this recipe - from vegetable, bean, and pasta dishes to meats such as braised lamb, beef, or chicken.

Chopped mint oxidizes quickly when wet and can turn a darker color.  Add the mint to the pesto as the last step before serving.

Don't want to hand chop the ingredients?  No problem - toss everything for the pesto recipe in a food processor and pulse lightly.

Serve this mint pesto on meat and veggie dishes like:

Ingredients

  • ⅔ oz mint leaves (this is the size of most packaged mint containers), stems removed & sliced
  • ⅓ cup (~ 1.5 oz) whole almonds, chopped
  • ½ an orange, zested
  • 1 teaspoon garlic, finely minced or smashed
  • dash of olive oil to your liking
  • salt to taste
  • black pepper to taste

Instructions

  • Chiffonade (thinly slice) the mint leaves.  
  • Chop the almonds or smash them in a ziploc bag by hitting them with the back of a large spoon.
  • Finely mince the garlic.  
  • Zest ½ an orange.  
  • Combine all ingredients in a bowl and add olive oil, salt, and black pepper to taste.

Notes
