This easy shiitake mushroom gravy recipe is delicious and versatile.  Shiitake gravy is a rich and flavorful mushroom sauce.

Ingredients

  • 1/4 cup unsalted butter
  • 16 oz shiitake mushrooms, sliced
  • 1/4 cup all purpose flour
  • 1 quart beef, chicken, turkey, or vegetable broth
  • 3 large thyme sprigs - optional
  • salt to taste
  • black pepper to taste

Instructions

  • Bring a large pan to medium high heat and melt the butter.
  • Add shiitake mushrooms, reduce heat to medium, and simmer uncovered ~ 15-20 minutes or until all liquid has evaporated.
  • Reduce heat and stir in the flour and cook ~ 5 minutes uncovered, watching carefully and stirring so it doesn't burn. It will look clumpy.
  • Slowly whisk into pan 1 cup of broth at a time to incorporate with the flour mixture. Add thyme and bring to a boil.
  • Reduce heat to a simmer and cook uncovered until thickened ~ 25-30 minutes stirring often.
  • Remove thyme stems and season with salt and pepper.
