- 1/4 cup unsalted butter
- 16 oz shiitake mushrooms, sliced
- 1/4 cup all purpose flour
- 1 quart beef, chicken, turkey, or vegetable broth
- 3 large thyme sprigs - optional
- salt to taste
- black pepper to taste
- Bring a large pan to medium high heat and melt the butter.
- Add shiitake mushrooms, reduce heat to medium, and simmer uncovered ~ 15-20 minutes or until all liquid has evaporated.
- Reduce heat and stir in the flour and cook ~ 5 minutes uncovered, watching carefully and stirring so it doesn't burn. It will look clumpy.
- Slowly whisk into pan 1 cup of broth at a time to incorporate with the flour mixture. Add thyme and bring to a boil.
- Reduce heat to a simmer and cook uncovered until thickened ~ 25-30 minutes stirring often.
- Remove thyme stems and season with salt and pepper.
