Prosciutto Wrapped Melon

This cantaloupe wrapped in Italian prosciutto ham is one of the easiest and lightest recipes for a hot summer day.  Use any melon - cantaloupe or honeydew to wrap with prosciutto.

Ingredients

  • 1 small melon or cantaloupe
  • 1 package prosciutto (8 count)

Instructions

  • Peel, half, and seed the melon.  Cut into ~ 1" slices.
  • Wrap prosciutto around each slice.  
  • Serve immediately.

Notes

Prosciutto is very thin and hard to wrap.  Sometimes, it's just about sticking the Italian ham to the melon and not wrapping it.
