Roasted Cumin Sweet Potato Coins

Skin on sweet potatoes are sliced into coins, tossed with olive oil, cumin, salt, and pepper and roasted uncovered at 425F for ~ 20 minutes or until soft. Garnish with sour cream and chives or green onions.

Ingredients

  • 4 medium sweet potatoes, skin on & sliced into 1/2" coins
  • 2 Tbsp e.v. olive oil
  • 1 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 Tbsp chives, sliced - optional as garnish
  • 3/4 cup sour cream or yogurt- optional as garnish

Instructions

  • Preheat oven to 425F and line a baking sheet for easy clean up. Lightly oil the pan if using aluminum or cooking directly on the pan.
  • Toss together sweet potatoes, olive oil, salt, pepper, and cumin together in a large bowl.
  • Place sweet potatoes on sheet pan and don't overcrowd (don't let them touch each other).
  • Roast uncovered for ~20 minutes (flipping once at 10 minutes) or until tender. The bottoms may burn if you don't flip 'em!
  • Top with sour cream and chives.  Add salt to taste.  Happy eating!  Beckie

Notes

  • Don't overcrowd the pan.  Use two pans if needed.
