Roasted Sweet Potato Coins with Cumin

Oven baked / roasted sweet potato slices (AKA coins, rounds, medallions) are healthy, delicious, easy, and an addicting side dish recipe.

Variations on Roasted Sweet Potato Coins with Cumin

Leave the sweet potato skin on or take it off depending on your preference. Leaving on the skin is easier plus it's full of nutrients and gives more texture.

Add a little maple syrup, brown sugar, or cinnamon if you want the roasted sweet potatoes to taste sweeter.  Add the syrup or sweetener half way through the cooking time so it doesn't burn.

Look for reddish-brown sweet potatoes with an orange interior like garnet, beauregard, or jewel. I prefer thinner longer sweet potatoes for coins but big fatties can be used as well.

Don't like cumin? Cool the technique is the same. Leave the cumin out and follow the recipe. Add your favorite spices if you like.

Ingredients

  • 4 medium sweet potatoes, skin on & sliced into ½" coins
  • 2 tablespoon e.v. olive oil
  • 1 ½ teaspoon ground cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 Tbsp chives, sliced - optional as garnish
  • ¾ cup sour cream or yogurt- optional as garnish

Instructions

  • Preheat oven to 425F and line a baking sheet for easy clean up. Lightly oil the pan if using aluminum or cooking directly on the pan.
  • Toss together sweet potatoes, olive oil, salt, pepper, and cumin together in a large bowl.
  • Place sweet potatoes on sheet pan and don't overcrowd (don't let them touch each other).
  • Roast uncovered for ~20 minutes (flipping once at 10 minutes) or until tender. The bottoms may burn if you don't flip 'em!
  • Top with sour cream and chives.  Add salt to taste.  Happy eating!  Beckie

  • Don't overcrowd the pan.  Use two pans if needed.
