Bring a large pot to medium high heat and add olive oil to lightly coat the pan. Add onions, chorizo, paprika, thyme, oregano, and sea salt. Cook for ~ 6-8 minutes or until sausage is done.
Add the garlic and cook 1-2 minutes or until fragrant.
Add the bay leaves, tomatoes, water/broth, and potatoes. Bring to a boil, reduce heat and simmer covered ~ 12 minutes or until potatoes are tender with a fork.
Add corn and shrimp and more water/broth until desired consistency. Cook an additional 3-5 minutes until shrimp are pink and done. Fold in the kale and cook until wilted (~2 minutes).
Add sea salt to taste and spice it up with chili pepper flakes if you like.
