Ingredients
- ~1 ½ tablespoon e.v. olive oil
- 1 cup onion, diced
- ¾ lb ground chorizo, casings removed if needed
- 1 tablespoon ground paprika
- ½ teaspoon dried thyme
- ½ teaspoon dried oregano
- 1 ¼ teaspoon salt
- 1 tablespoon garlic, minced
- 2 bay leaves
- 15 ounces canned diced tomatoes w/ juices
- 4 cups water or broth
- 1 lb potatoes, peeled & diced
- 1 ½ cup frozen corn
- 1 ¼ lb shrimp, peeled & deveined
- 1 small bunch kale, chopped
- ¼ cup parsley, chopped - as garnish
Instructions
- Bring a large pot to medium high heat and add olive oil to lightly coat the pan.
- Add onions, chorizo, paprika, thyme, oregano, and salt. Cook for ~ 6-8 minutes or until sausage is done.
- Add the garlic and cook 1-2 minutes or until fragrant.
- Add the bay leaves, tomatoes, water/broth, and potatoes.
- Bring to a boil, reduce heat and simmer covered ~ 12 minutes or until potatoes are tender but a bit al dente with a fork.
- Add corn and shrimp and more water/broth until desired consistency. Cook an additional 3-5 minutes until shrimp are pink and done.
- Stir in the kale and cook until wilted (~2 minutes).
- Add salt to taste and spice it up with chili pepper flakes if you like.
