This wholesome comforting vegetarian split pea soup recipe is affordable & easy. Add ham if you want. Add 10 ounces cooked diced ham to this recipe if you want a meaty version.
Add olive oil to a large stockpot and bring to medium high heat.
Add onions, carrots, and celery and a bit of salt. Cook covered ~ 5-7 minutes or until vegetables are translucent. Add more olive oil if it is dry and/or reduce the heat.
Add remaining ingredients and bring to a boil.
Reduce heat and simmer covered (stirring occasionally) for ~ 2 - 2 ½ hours or until peas are tender.
Add more water or broth if you like a thinner consistency.
Top with fresh chopped parsley and add salt to taste. Serve with fresh bread. Happy Soup Eating! Beckie
Crockpot:
Mix split peas, onions, carrots, celery, salt, broth, bay leaves, and 1/2 cup parsley in a crockpot and cook on low 6-8 hours. Add salt to taste.
Notes
This soup will get thicker as it sits. Add more water or broth if you like a thinner consistency.
Don't have parsley? Cool - chop up some of the fresh celery leaves off the stalk and garnish with that or just leave it out.
