Easy Vegetarian Split Pea Soup

This wholesome comforting vegetarian split pea soup recipe is affordable & easy. Add ham if you want.  Add 10 ounces cooked diced ham to this recipe if you want a meaty version.

Ingredients

Units Scale
  • 1 lb (~2 cups) dried split peas
  • 1 cup (~4 ounces) onions, diced
  • 1 1/2 cup carrots, small dice
  • 1 cup celery, small dice
  • 3/4 tsp salt
  • 8 cups vegetable broth
  • 2 bay leaf
  • 3/4 cup parsley, chopped & divided

Instructions

Stockpot:

  • Add olive oil to a large stockpot and bring to medium high heat.
  • Add onions, carrots, and celery and a bit of salt.  Cook covered ~ 5-7 minutes or until vegetables are translucent.  Add more olive oil if it is dry and/or reduce the heat.
  • Add remaining ingredients and bring to a boil.
  • Reduce heat and simmer covered (stirring occasionally) for ~ 2 - 2 ½ hours or until peas are tender.
  • Add more water or broth if you like a thinner consistency.  
  • Top with fresh chopped parsley and add salt to taste.  Serve with fresh bread.  Happy Soup Eating!  Beckie

Crockpot:

  • Mix split peas, onions, carrots, celery, salt, broth, bay leaves, and 1/2 cup parsley in a crockpot and cook on low 6-8 hours.  Add salt to taste.

Notes

  • This soup will get thicker as it sits.  Add more water or broth if you like a thinner consistency.
  • Don't have parsley?  Cool - chop up some of the fresh celery leaves off the stalk and garnish with that or just leave it out.
