Vegetarian split pea soup is also vegan, gluten free, dairy free, and ayurvedic.

How To Cook Vegetarian Split Pea Soup

Cook vegetarian split pea soup on the stovetop, in a crockpot, or in a Instant Pot.

Stockpots take ~ 2 hours. Crockpots on low 6-8 hours. Instant Pot generally take about 30 minutes.

Ingredients on a wood cutting board: bay leaves, celery with leaves, onion, carrot, split peas in a measuring cup and broth in a measuring cup.

Split peas do not need soaking like other dry beans, making them even easier to cook.

Vegetarian split pea soup will get thicker as it sits.  Add more water or broth if you like a thinner consistency.

Freeze extra Split Pea Soup

Split pea soup freezes very well. 

Make a double batch and stick one in the freezer for later or freeze any leftovers if you have them.

Freeze vegetarian split pea soup in individual serving sizes or in larger family size containers. Cool split pea soup fully before freezing.

Variations For Vegetarian Split Pea Soup

Don't have parsley? Cool - chop up some of the fresh celery leaves off the stalk and garnish with that or just leave it out.

Add 10 ounces cooked diced ham to this recipe if you want a meaty version of simple split pea soup.

Add favorite herbs or spices for different variations of vegetarian split pea soup. Some ideas are:

  • curry powder
  • chili powder
  • cumin
  • turmeric
  • fresh or dried rosemary
  • fresh or dried thyme

Ingredients

  • 1 lb (~2 cups) dried split peas
  • 1 cup (~4 ounces) onions, diced
  • 1 ½ cup carrots, small dice
  • 1 cup celery, small dice
  • ¾ tsp salt
  • 8 cups vegetable broth
  • 2 bay leaf
  • ¾ cup parsley, chopped & divided

Instructions

Stockpot:

  • Add olive oil to a large stockpot and bring to medium high heat.
  • Add onions, carrots, and celery and a bit of salt.  Cook covered ~ 5-7 minutes or until vegetables are translucent.  Add more olive oil if it is dry and/or reduce the heat.
  • Add remaining ingredients and bring to a boil.
  • Reduce heat and simmer covered (stirring occasionally) for ~ 2 - 2 ½ hours or until peas are tender.
  • Add more water or broth if you like a thinner consistency.  
  • Top with fresh chopped parsley and add salt to taste.  Serve with fresh bread.  Happy Soup Eating!  Beckie

Crockpot:

  • Mix split peas, onions, carrots, celery, salt, broth, bay leaves, and ½ cup parsley in a crockpot and cook on low 6-8 hours.  Add salt to taste.

Notes

  • This soup will get thicker as it sits.  Add more water or broth if you like a thinner consistency.
