This is the arugula version of the famous Bacon Lettuce Tomato Sandwich.  Bacon arugula tomato sandwich is an easy summer sandwich when tomatoes are ripe and ready.

Ingredients

  • 2 slices bread, toasted
  • 3 Tbsp mayonnaise
  • 1 cup arugula
  • 4-5 slices cooked bacon
  • 1 medium tomato, sliced

Instructions

  • Preheat oven to 375F.
  • For Bacon:  Lay out bacon on an aluminum lined baking sheet, careful to not crowd.  Place in an unwarmed oven, set to 375F and cook for ~14-25 minutes depending on thickness (no need to flip it at any point). Cool slices on a baking rack over a lined baking sheet (makes it easier to clean) or on a paper towel lined plate.
  • For Sandwich: Lightly toast 2 slices of bread, slather mayonnaise on bread, add arugula, sliced and salted tomato, and cooked bacon.  Happy Eating!  Beckie

Notes

Save your bacon grease in a clean jar with lid and put in refrigerator.  You can use this as you would other oils.  My mom used to cook popcorn with it - YUM.  we also cook our morning eggs in it.
