Save your bacon grease in a clean jar with lid and put in refrigerator. You can use this as you would other oils. My mom used to cook popcorn with it - YUM. I also cook my morning eggs in it.
Bacon grease stays good in the refrigerator for at least 6 months if not a year. I have never tasted rancid bacon grease from the refrigerator but we also use it within 6 month. I never strain it because I like all the bits. Strain it if you don't.
Homemade Mayonnaise is one of my favorite things to whip up by hand. Some people use a food processor or blender but I like to see and feel the dressing get thicker as it's made. This also enables you to determine when it's the right thickness. It's also very simple to make once you get the hang of it. Watch my video on youtube to learn how to make mayo.
