Bacon Arugula Tomato Sammy
Ripe Tomatoes = best summer sandwiches. This is an arugula version of the famous Bacon Lettuce Tomato Sandwich. Buy mayonnaise or watch my video on how to make it at home.
Homemade Mayo is one of my favorite things to whip up by hand. Some people use a food processor or blender but I like to see and feel the dressing get thicker as it’s made. This also enables you to determine when it’s the right thickness. It’s also very simple to make once you get the hang of it. Watch my video below to learn how to make mayo.

- 2 slices bread, toasted
- 3 Tbsp mayonnaise
- 1 cup arugula
- 4-5 slices cooked bacon
- 1 medium tomato, sliced
- Preheat oven to 375F.
- For Bacon: Lay out bacon on an aluminum lined baking sheet, careful to not crowd. Cook directly on the sheet and not on a rack – it stays moister. Place in an unwarmed oven, set to 375F and cook for ~20-22 minutes (no need to flip it at any point). If the oven is pre-warmed to 375F, cook ~13-15 minutes or until done. Cool slices on a baking rack over a lined baking sheet (makes it easier to clean) or on a paper towel lined plate.
- For Sandwich: Toast 2 slices of bread, slather mayonnaise on bread, add cooked bacon, sliced tomato, and plenty of arugula. Happy Eating! Beckie
Save your bacon grease in a clean jar with lid and put in refrigerator. You can use this as you would other oils. My mom used to cook popcorn with it – YUM. I also cook my morning eggs in it.
