Bacon Arugula Tomato Sandwich

Ripe Tomatoes make the best summer bacon arugula tomato sandwiches.

Buy mayonnaise or make your own at home.  Check out how to make bacon easy and fast. Otherwise, this arugula BLT is awesome with regular mayonnaise or one flavored with horseradish or sriracha.

Save Bacon Grease For Later

Save bacon grease in a clean jar with lid and put in refrigerator.  You can use this as you would other oils.  My mom used to cook popcorn with it - YUM.  We also cook our morning eggs in it.

Bacon grease stays good in the refrigerator for at least 6 months if not a year. I have never tasted rancid bacon grease from the refrigerator, but we also use it within 6 month. I never strain it because I like all the bits. Strain it if you don't.

Ingredients

  • 2 slices bread, toasted
  • 3 tablespoon mayonnaise
  • 1 cup arugula
  • 4-5 slices cooked bacon
  • 1 medium tomato, sliced

Instructions

  • Preheat oven to 375F.
  • For Bacon:  Lay out bacon on an aluminum lined baking sheet, careful to not crowd.  Place in an unwarmed oven, set to 375F and cook for ~14-25 minutes depending on thickness (no need to flip it at any point). Cool slices on a baking rack over a lined baking sheet (makes it easier to clean) or on a paper towel lined plate.
  • For Sandwich: Lightly toast 2 slices of bread, slather mayonnaise on bread, add arugula, sliced and salted tomato, and cooked bacon.  Happy Eating!  Beckie
