Marinate sliced pork in lime juice, coriander, cumin, paprika, salt, and black pepper for 30 minutes.
Bring a pan to medium high heat and add enough vegetable oil to coat the bottom of the pan.
Throw in the pork slices and fry ~ 2-3 minutes per side or until internal temperature reaches 145F. You may need to cook the pork in batches as you want to try and sear and not steam it.
