Some days I peel the cucumber and some days I don't. Mostly I don't. Your choice. Here's some other ideas:
- Try different vinegars: white wine, champagne, red wine, etc. I stay away from balsamic vinegar because it changes the color too much.
- Add some fragrant spices like chili powder, curry powder, old bay seasoning, etc...
- Add favorite fresh or dried herbs like Italian seasoning, mint, basil, sage, or thyme.
- Use red onions, yellow onions, sweet onions, or shallots or just leave out all the onions.
- Make thin slices or thick slices depending on how your feeling.

Ingredients
- 3 medium cucumbers, peeled or unpeeled & thinly sliced
- ½ cup red onions, thinly sliced
- 2 tablespoon fresh dill, chopped
- ⅓ cup apple cider vinegar
- 1 tablespoon e.v. olive oil
- 1 teaspoon salt
- pinch black pepper
Instructions
- Mix all ingredients in a large bowl and marinate for a couple hours.
- Add salt and vinegar to taste.
- Stays good ~ 7 days in the refrigerator.

- Any vinegar will work: I love white wine vinegar too.
