My uncle always had cucumbers marinated in vinegar in the refrigerator when we were growing up.  We ate some version of this cucumber dill salad recipe as a snack non-stop in the summers.

Ingredients on a wood cutting board: sliced cucumbers, sliced red onions, chopped herbs and small containers of liquid ingredients. Top down view.

Cucumber Dill Salad Is Good For A Week In the Fridge

Cucumber dill salad is a fast, simple, and easy recipe that stays good in the refrigerator for a week.

Arguably, it gets better and more pickled the longer it sits - if you can wait that long to eat it.

Variations on Cucumber Dill Salad

Some days I peel the cucumber and some days I don't. Mostly I don't. Your choice. Here's some other ideas:

  • Try different vinegars: white wine, champagne, red wine, etc. I stay away from balsamic vinegar because it changes the color too much.
  • Add some fragrant spices like chili powder, curry powder, old bay seasoning, etc...
  • Add favorite fresh or dried herbs like Italian seasoning, mint, basil, sage, or thyme.
  • Use red onions, yellow onions, sweet onions, or shallots or just leave out all the onions.
  • Make thin slices or thick slices depending on how your feeling.
