My uncle always had cucumbers marinated in vinegar in the refrigerator when we were growing up.  We ate some version of this cucumber salad recipe as a snack non-stop in the summers.

Cucumber Dill Salad Is Good A Week In the Fridge

Cucumber dill salad is a fast side dish that stays good in the refrigerator for a week.

Arguably, it gets better and more pickled the longer it sits - if you can wait that long to eat it.

Variations on Cold Cucumber Dill Salad

Some days I peel the cucumber and some days I don't. Mostly I don't. Your choice. Here's some other ideas:

  • Try different vinegars: white wine, champagne, red wine, etc. I stay away from balsamic vinegar because it changes the color too much.
  • Add some fragrant spices like chili powder, curry powder, old bay seasoning, etc...
  • Add favorite fresh or dried herbs like Italian seasoning, mint, basil, sage, or thyme.
  • Use red onions, yellow onions, sweet onions, or shallots or just leave out all the onions.

Ingredients

  • 3 medium cucumbers, peeled or unpeeled & thinly sliced
  • ½ cup red onions, thinly sliced
  • 2 tablespoon fresh dill, chopped
  • ⅓ cup apple cider vinegar
  • 1 tablespoon e.v. olive oil
  • 1 teaspoon salt
  • pinch black pepper

Instructions

  • Mix all ingredients in a large bowl and marinate for a couple hours.  
  • Add salt to taste.  Stays good ~ 7 days in the refrigerator.  Happy Eating!  -Beckie
