Skip marinating the pork tenderloin and head straight to the pan with all the ingredients. Sometimes, you just gotta skip the marinating and get dinner on the table.

Don't have time or want to slice the pork tenderloin?

Instead of pan searing the pork tenderloin slices switch to baking it whole. Bake the pork tenderloin at 375 for ~ 25 minutes or until internal temperature of the pork reaches 145F.

Ingredients

  • 1 ¼ lb pork tenderloin, thinly sliced
  • 1 ½ tablespoon vegetable oil
  • 3 Tbsp fresh lime juice
  • 1 ½ teaspoon ground coriander
  • 1 ½ teaspoon ground cumin
  • 1 teaspoon ground smoked paprika
  • ½ teaspoon salt
  • pinch black pepper

Instructions

  • Marinate sliced pork in lime juice, coriander, cumin, paprika, salt, and black pepper for 30 minutes.
  • Bring a pan to medium high heat and add enough vegetable oil to coat the bottom of the pan.  
  • Throw in the pork slices and fry ~ 2-3 minutes per side or until internal temperature reaches 145F. You may need to cook the pork in batches as you want to try and sear and not steam it.
  • Add salt to taste.

Notes

  • Serve with Roasted Sweet Potatoes and fresh Tomato Salsa or Cucumber Salad.
