Purple Wax Beans with Chopped Eggs

Take your green bean recipe up a notch and add a finely chopped hard boiled egg garnish. This recipe uses purple wax beans but regular green beans will work too.

Change up your regular green bean side dish and add a finely chopped boiled egg garnish.

Beautiful purple wax beans (aka string or snap bean) turn green when cooked.  Use it in a recipe raw if you want to retain the color -  but it may be a touch tough depending on the age. 

Use regular green beans if you can't find purple wax beans.

Purple Wax Beans Turn Green Once Cooked

Purple wax beans get their color from a pigment called anthocyanin (same pigment in blueberries and red cabbage).  When heated, the pigment is broken down and exposes the underlying green chlorophyll that we are familiar with.

Wanna make this recipe easier and don't want to get the knife and board out?  Cool - blanch the beans with the tough end pieces on and don't eat the stem end.

Boiled Egg Garnish Tips

Separate the cooked egg yolk and the cooked white after the hard boiled egg is peeled. Finely dice or run the egg white first through a sieve or potato ricer and repeat with the yolk.

Ingredients

  • 1 lb purple wax beans (green beans work too)
  • 2 tablespoon olive oil
  • 1 tablespoon white wine vinegar
  • ½ teaspoon salt
  • pinch black pepper
  • 2 eggs, hard boiled

Instructions

  • Bring a large pot of water to a boil and add salt.
  • Trim off the tough ends on both sides of the bean (most of the time just the stem end needs trimmed).
  • Simmer the green beans for 3-7 minutes or until desired tenderness.  
  • Drain green beans, toss with olive oil, vinegar, salt, and pepper and plate.
  • Separate the egg yolk from the white on the hard boiled eggs
  • Finely chop or push egg whites first and then yolks next through a Potato ricer or fine mesh sieve to get them nice and fluffy.  
  • Place the minced yolk in a line down the center of the plate of green beans.  Add the whites on both sides of the yolk.  Make it look pretty, y'all!
  • Serve hot or cold.  Add salt to taste. 

Notes

  • Don't want to get the knife and board out?  Cool - blanch the beans with the tough sides on and don't eat the stem end.
  • Can't find purple wax beans?  Cool - use fresh green beans instead.
