I have never met a person that doesn't like this baked brie in puff pastry (except for gluten and dairy free folks 🙂).

FYI - Croute rhyme with / sounds like "Root" (like a plant with its roots in the ground). If you get intimidated pronouncing Brie en Croute then just say Brie wrapped in puff pastry.
Puff pastry usually comes frozen in a box of two - keep the other frozen for later and defrost the one you will be using.
How To eat Brie en Croute
Let the baked brie in puff pastry cool a little first. Baked brie is the best when it's a little gooey, but still holds most of it's form.

Nope. I mean, you can, but brie is meant to be eaten with the soft rind. The rind is flavorful, plus it helps holds the rest of the cheese together so it doesn't melt and ooze all over the place.

I don't suggest it. It's not super hard to make. If your really crunching time and want to prepare something, then prepare the nut and butter mixture and put it on the top of the cold brie and refrigerate. Wrap it up in the puff pastry and bake immediately.

Ingredients
- 8 ounce Brie Wheel
- 1 sheet of puff pastry
- 1 tablespoon unsalted butter
- ½ cup walnuts, chopped
- ⅛ teaspoon cinnamon
- ¼ cup brown sugar
- 1 egg, mixed
- apples and/or crackers
Instructions
- Preheat oven to 400F and line a baking sheet with foil or parchment (for easy clean up).
- Melt butter in a small pan at medium heat. Add nuts to melted butter, reduce heat, and cook for ~ 3-4 minutes or until fragrant.
- Remove pan from heat and stir in ⅛ - ¼ teaspoon ground cinnamon.
- Lay one sheet of defrosted puff pastry on a lined baking sheet and add an 8 ounce brie wheel to the middle.
- Top with nut/butter mixture and add ¼ cup brown sugar.
- Wrap the pastry around it and gently press it together until it sticks.
- Gently tie up excess dough with kitchen twine OR gently push the dough together and skip the twine.
- Brush a beaten egg over any exposed pastry (this will help give it a nice brown crust).
- Cook for 20-25 minutes or until golden brown.
- Rest 20-30 minutes before serving. If you cut into this too soon, it will be a hot and yummy but a very runny mess.
