I have never met a person that doesn't like this baked brie in puff pastry (except for gluten and dairy free folks 🙂).

Baked Brie wrapped in puff pastry really packs a punch in flavor and presentation. People also think you spent hours on a fancy recipe, when Brie en Croute, in actuality, is really easy to make.

Pronouncing Brie en Croute

FYI - Croute rhyme with / sounds like "Root" (like a plant with its roots in the ground). If you get intimidated pronouncing Brie en Croute then just say Brie wrapped in puff pastry.

Puff pastry usually comes frozen in a box of two - keep the other frozen for later and defrost the one you will be using.

How To eat Brie en Croute

Let the baked brie in puff pastry cool a little first. Baked brie is the best when it's a little gooey, but still holds most of it's form.

Wait at least 20 minutes before slicing into baked brie with a knife. The first slice is always the toughest.

If the baked brie is still too runny then be patient and wait for it to solidify a bit more or just start dipping instead.

Wait at least 30 minutes for Brie en Croute to cool down if you want definitive slices.

What To Serve With Brie en Croute

Generally speaking, serve the entire wheel of Brie en Croute on a platter with a butter or cheese knife.

Serve brie with bread or crackers or surround brie with sliced apples. Feeling extra festive? Add some grapes, more nuts, or pomegranate seeds.

Brie baked with brown sugar in puff pastry won't last long, and it is excellent for breakfast if you magically end up with any leftovers.

Baked Brie en Croute Toppings

ANYTHING tastes good cooked with baked brie with brown sugar in puff pastry.

  • Fresh or Dried Fruit - Cranberries, Cherries, Raspberries, Figs, Blueberries, Pears, Apricots, Strawberries
  • Sweeteners: Brown sugar, Honey, Maple Syrup
  • Nuts: Pecans, Sliced almonds, Walnuts, Pistachios
  • Jam or Jelly layer on the top

Want a savory brie en croute? Throw in your favorite ingredients. I've made Brie wrapped in puff pastry mediterranean style with olives, artichokes, and roasted red peppers.

Baked Brie and puff pastry is also delicious with sautéed onions and mushrooms.

Baked Brie en Croute Recipe FAQS

Do you take the rind off brie before baking?

Nope. I mean, you can, but brie is meant to be eaten with the soft rind. The rind is flavorful, plus it helps holds the rest of the cheese together so it doesn't melt and ooze all over the place.

What do I serve with baked brie?

Apples, grapes, crackers, baguette slices. Other festive things on the board could include charcuterie (salamis, hams, etc...), sun dried tomatoes, and sliced pears.

Can I make Brie en Croute ahead of time?

I don't suggest it. It's not super hard to make. If your really crunching time and want to prepare something, then prepare the nut and butter mixture and put it on the top of the cold brie and refrigerate. Wrap it up in the puff pastry and bake immediately.

Ingredients

  • 8 ounce Brie Wheel
  • 1 sheet of puff pastry
  • 1 tablespoon unsalted butter
  • ½ cup walnuts, chopped
  • ⅛ teaspoon cinnamon
  • ¼ cup brown sugar
  • 1 egg, mixed
  • apples and/or crackers

Instructions

  • Preheat oven to 400F and line a baking sheet with foil or parchment (for easy clean up).
  • Melt butter in a small pan at medium heat.  Add nuts to melted butter, reduce heat, and cook for ~ 3-4 minutes or until fragrant.  
  • Remove pan from heat and stir in ⅛ - ¼ teaspoon ground cinnamon.
  • Lay one sheet of defrosted puff pastry on a lined baking sheet and add an 8 ounce brie wheel to the middle.  
  • Top with nut/butter mixture and add ¼ cup brown sugar.
  • Wrap the pastry around it and gently press it together until it sticks.
  • Gently tie up excess dough with kitchen twine OR gently push the dough together and skip the twine.  
  • Brush a beaten egg over any exposed pastry (this will help give it a nice brown crust).
  • Cook for 20-25 minutes or until golden brown.  
  • Rest 20-30 minutes before serving.  If you cut into this too soon, it will be a hot and yummy but a very runny mess.  
  • Serve with sliced apples and crackers.  Happy Eating!  Beckie

  • ANYTHING tastes good cooked with brie in puff pastry.  Throw some jelly or jam on there if you don't have the rest of the ingredients and bake according to instructions above.
  • Don't have walnuts? Skip it or try a different kind of nut.
