Smoked Salmon Cucumber Bites Appetizer

Smoked salmon cucumber bites appetizer is a recipe that impresses visually and also tastes crisp, fresh, and flavorful.

Cucumbers piled high with smoked salmon are the perfect finger food appetizer for a healthy snack or festive party.

Serve smoked salmon cucumber bites cold.

Remove The Seeds For Smoked Salmon Cucumber Bites

Remember to scoop the seeds out of the cucumber slices but don't go all the way through. Make sure that the cucumbers still have a bottom so that the smoked salmon filling doesn't fall out.

The divot in the cucumber slice creates a pocket to fill up with salmon ingredients.

It also keeps the cucumber from getting soggy because the wet seeds have been removed.

Variations on Smoked Salmon Cucumber Appetizers

Like lemon?  Squeeze a little fresh lemon over the top of the salmon cucumber bites before serving.

Fresh lemon juice in this recipe is delicious but the lemon also dulls the pink salmon's vibrant pink color, making it less appealing as an appetizer if it sits too long.

Trying to simplify your smoked salmon bites? Leave out the fresh herbs, caper, or the mustard.

Cucumbers and smoked salmon is a classic and simple appetizer without any additional ingredients.

Add Cheese or Yogurt To Smoked Salmon Cucumber Bites

Love cream cheese? Add a smear of cream cheese on top of the cucumber slices before adding the smoked salmon mixture.

Likewise, a dab of goat cheese, greek yogurt, or sour cream is also good on cucumber bites.

Otherwise, enjoy this delicious cucumber and smoked salmon appetizer without any dairy.

Smoked salmon cucumber bites are the perfect easy appetizer recipe for a party. Smoked salmon is mixed with capers, finely diced red onions, and dijon mustard and stuffed into a seeded cucumber slice.

Ingredients

  • 2 large English cucumbers
  • ¼ lb smoked salmon, chopped
  • 3 tablespoon red onion, finely chopped
  • 2 teaspoon dijon mustard
  • 1 ½ tablespoon capers, drained
  • pinch black pepper
  • 1 tablespoon e.v. olive oil
  • 2 tablespoon fresh dill, chopped
  • 3 tablespoon fresh parsley, finely chopped optional as garnish

Instructions

  • Slice cucumbers in ½" thick rounds (should have ~ 18 slices) and lay out on a platter.  If there are a lot of seeds, you can scoop out a little divot in the cuke, so the mixture stays contained better & doesn't become watery.
  • Mix together all ingredients except cucumbers and parsley in a medium bowl.  Add salt to taste.  
  • Scoop 1 tablespoon (a small mound) on each of the cucumber pieces.  
  • Sprinkle with parsley garnish.  Happy Eating!  Beckie

Notes

  • Like lemon?  Squeeze a little fresh lemon over the top right before serving.  I would've put it in the recipe but the lemon juice dulls the pink salmon color, making it less appealing if it sits long.
  • Want it a little creamy?  Add some Greek yogurt or sour cream.

  • Pastry "scooper" - also known as a pastry scraper or chopper.  I use it to scoop up ingredients and place in a bowl.  Tons more efficient than using your hands to transfer chopped food.
  • Tomato or Strawberry Corer - Serrated edges are great for scooping out the cucumber divots. Also good for taking out the seeds and stringy bits of winter squashes.
