Easy Baked Chicken Breast with Curry

This oven baked chicken breast with curry and lemon recipe is easy and fast to make. Dinner is on the table in 20 minutes. Bake curry chicken breast in oven at 400F ~ 12 minutes.

Variations on Baked Chicken Breast with Curry Powder

Chicken breast baked with curry powder and lemon is versatile. Try some of these different ingredients:

  • fresh or dried herbs like rosemary, thyme, oregano, sage, Italian seasoning
  • Add some cayenne, chili powder, 5 spice powder, all season powder, a touch of chicken broth powder, etc...

Cooking Method is Constant For Baking Curry Chicken

This baked thin chicken breast is in the oven ~ 12 minutes. But, it can be used with chicken breast that has not been butterflied or with chicken thighs with bone and skin or boneless.

The guideline is to cook chicken until the internal temperature reaches 165F and the juices run clear. Here's a general breakdown of what that looks like in most ovens:

  • Thin Butterflied Chicken Breast - cook at 400F ~ 12 minutes.
  • Chicken Breast not butterflied ~ 25 minutes
  • Boneless Chicken Thighs ~ 25 minutes
  • Bone In, Skin On Chicken Thighs ~ 45 minutes

Ingredients

  • 1 ½ lb chicken breast or tenders
  • 1 tablespoon olive oil
  • 1 ½ teaspoon curry powder
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • 1 lemon zested and sliced

Instructions

  • Preheat oven to 400F and line a baking sheet with parchment paper.  Lightly oil parchment paper
  • Zest lemon and set zest aside.  Slice lemon after it's zested.
  • Butterfly chicken if they are not thin.  This means to cut in half like a book to make thinner. *see video
  • Lay chicken on sheet pan and rub olive oil, salt, curry powder, and thyme into the chicken on both sides.
  • Lay lemon slices on top of chicken.
  • Bake for ~ 12 minutes or until internal temperature of chicken reaches 165F and juices run clear.
  • Serve with juices from sheet pan if desired. Add lemon zest as a garnish and salt to taste.

Notes

  • Chicken tenders work for this recipe as well.  Cooking time may be adjusted down to 8-10 minutes depending on the size of the tenders.
  • Baked Chicken with curry is delicious cut up and used on salads, soups, tacos, etc...
