Add Another Protein To Make Arugula Edamame Salad a Main Dish

Add some pan fried chicken, pan fried shrimp, or tamari tofu to this arugula and edamame salad and turn it into a fast main meal.

Defrost Shelled Frozen Edamame For This Arugula Salad

Grab some frozen shelled edamame the next time you're at the grocery store.

Frozen edamame is so versatile, like frozen peas and corn. It lasts a long time, defrosts quick, and is a fast protein to get on the table or add to a salad.

No Whisk Arugula Edamame Salad Dressing

Most salad dressings are made by whisking in the oil slowly.  Sometimes, time is an issue and we want to eat faster.  

Instead of whisking, toss the mustard, toasted sesame oil, and ginger vinaigrette ingredients into a mason jar and shake vigorously. BOOM - Arugula, Tomato, Edamame salad dressing is DONE.

Ingredients

Ingredient List Salad:

  • 6 cups of arugula
  • 1 cup of frozen shelled edamame, defrosted
  • 1 cup of cherry tomatoes, quartered
  • ⅔ cup pecans, chopped

Ingredient List Dressing:

  • 2-3 tablespoon (~1 whole lime) fresh lime juice
  • 1 ½ teaspoon spicy mustard
  • ¼ teaspoon salt
  • pinch black pepper
  • 2 teaspoon fresh ginger, grated
  • ¼ cup toasted sesame oil

Instructions

  • For the salad: In a big bowl add all salad ingredients together.
  • For the dressing: Mix all ingredients in a small jar and shake.   Gently toss salad with dressing and plate.

Notes

  • Need more tang to your salad dressing and out of lime juice?  Try a little apple cider vinegar or white wine vinegar.
