Fresh Green Beans and Cherry Tomatoes

I cook professionally for a living.  It's the easier meals that nearly everyone loves - adults and kids.   This green beans and cherry tomatoes recipe is one of them. Blanch green beans and add fresh cherry tomatoes and toss with olive oil, salt, and pepper.

Dress Up Green Beans and Cherry Tomatoes

This is a basic green bean and cherry tomato recipe.  

Spice it up with pepper flakes or curry or garnish with your favorite nuts. Try some of these ideas:

  • nuts: walnuts, pecans, pine nuts, almonds...
  • herbs: rosemary, thyme, sage...
  • ground spices: curry powder, chili powder, cayenne pepper, cardamom...
  • add a different fat or oil: butter, sesame oil, peanut oil, coconut oil...

Blanching Green Beans

Blanching is throwing vegetables (nearly any kind) in a salted pot of boiling water, cooking for a couple minutes (or until desired tenderness), draining, and throwing them in an ice bath (ice and water) to cool them fast. It stops them from cooking more and retains a vibrant color.

Blanching is a perfect way to cook if you want to retain a vibrant color and crisp veggies.  It is also perfect if you want to cook them ahead of time because they will still look and taste fresh.

Eating the green beans right away and don't want to blanch?  Just drain the green beans and toss. Your good to go!

I like green crisp or al dente green beans.  Cook them a little more if you want them softer. 

Older green beans will naturally be tougher so they will need more cooking time than fresh green beans.

Easy recipe of blanched green beans & fresh cherry tomatoes, tossed with a little olive oil, salt, and pepper.

Ingredients

  • 1 lb green beans, trimmed
  • 1 cup cherry tomatoes
  • 2 tablespoon olive oil
  • ¼ teaspoon salt
  • pinch pepper

Instructions

  • Bring a large pot of water to a boil and toss in green beans.  Cook for ~ 2 ½-3 minutes or until desired tenderness.  Drain and add back to pan.
  • Add tomatoes to pan and toss with oil, salt, and pepper.  
  • Add more salt or oil to taste.  Happy Eating!  Beckie

Notes

  • Want a richer taste?  Add a couple tabs of butter.
  • Add your favorite spices to switch up this simple recipe.

    Just made this with garden fresh green beans and tomatoes. So simple, so good. 50% of the the children in the family loved it and 100% of the adults!
