Easy Cole Slaw Dip (Mexican Cabbage Dip)

I love to use this simple Mexican cole slaw dip as the main garnish for my chicken tacos with enchilada sauce recipe and cilantro lime sour cream sauce.

Serve Cole Slaw Dip with Chips

This cole slaw dip is based on one of my favorite Mexican restaurants in my hometown of Grand Junction, Colorado.  It's a hole in the wall restaurant called El Tapitio and has the best carnitas. 

They serve a Mexican cabbage slaw dip like this with chips and salsa. 

This cabbage dip recipe is so delicious and even better after a couple days in the fridge.

Ingredients on a wood cutting board: cabbage, ½ lemon, jalapeno, salt, cilantro bunch, and olive oil.
Change up the ingredients based on what you have. This has sliced jalapeno peppers instead of red cabbage and shredded carrots and uses lemon juice instead of lime juice.

Variations on Mexican Cole Slaw Dip

This cabbage slaw recipe below was used with a pre-made cabbage mix to make it even easier.

When I made the instructional video I didn't have all the ingredients and substituted real cabbage for the pre-made mix. I also added jalapeños and chopped cilantro and used lemon juice instead of lime juice.

Never be afraid to modify a recipe, especially a simple one like this! Some other ideas are taco seasoning or a little mayo or sour cream stirred in.

Use a pre-made bagged cole slaw mix to make this cabbage slaw recipe even easier.

Easy Cole Slaw Dip Troubleshooting

Cole slaw dip needs to be soft and wilted to serve with chips.

Speed up the wilting process for the cabbage by salting the sliced cole slaw a bit. Leave it on the counter at room temperature leaving for at least 30 minutes to an hour and stir occasionally. Then add the remaining ingredients.

If your lime doesn't yield much juice then you will need 2 limes. Use lemon juice if you don't have fresh lime.

Ingredients

  • 12 ounces packaged cole slaw mix (sliced cabbage, red cabbage, carrots)
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • pinch black pepper
  • ½ small jalapeno, diced - optional as garnish
  • cilantro - optional as garnish

Instructions

  • Place all ingredients (except jalapeños and cilantro) in a bowl and mix. 
  • This is best if you can let it sit for a couple hours and is good for a couple days.  I think it's best at ~ 1-2 days but it hardly stays around this house that long.
  • Garnish with cilantro and jalapeños.  Serve with tortilla chips or on your tacos.  Happy Eating!  Beckie

Notes

  • Speed the process along of the cabbage wilting with salt by leaving on the counter for ~ 30 minutes and stirring randomly.
  • Grab 2 limes if they are small or if your lime doesn't yield much juice.
