I love pimento cheese y'all. This is one of my favorite sandwich recipes - toasted sourdough, homemade pimento cheese, fresh arugula, & tomatoes. My mouth is watering.
I make it a tartine (fancy French word for open faced sandwich) to keep it on the "lighter side" for lunch. This can also be made on little crostini's (fancy Italian word for toasted baguette slices) for a fantastic appetizer.
What is pimento cheese? It's extra sharp cheddar, mixed with chopped roasted pimentos (roasted red peppers) and combined with mayonnaise.
Some people use cream cheese but I prefer just the mayo. Make your own pimento cheese or buy it pre-made from the store.

Ingredients
- 1 piece of thick sourdough bread, toasted
- ⅓ cup pimento cheese, homemade or store bought
- ½ cup arugula
- 1 small tomato, sliced
- pinch salt
Instructions
- Toast bread.
- Slather with pimento cheese. Top (smash it down!) with arugula and sliced tomatoes.
