I love pimento cheese y'all. This is one of my favorite sandwiches - toasted sourdough, pimento cheese, tomatoes, and arugula. My mouth is watering.
Pimento Cheese and Tomato Sandwich
I make it a pimento cheese and tomato tartine (fancy French word for open faced sandwich) to keep it on the "lighter side" for lunch.
This can also be made on little crostini's (fancy Italian word for toasted baguette slices) for a fantastic appetizer or as a reg reg pimento cheese sandwich with tomatoes.
What is pimento cheese?
Pimento cheese at the basic level is shredded extra sharp cheddar, mixed with chopped roasted pimentos (roasted red peppers) and mayonnaise.
Some people use cream cheese but I prefer just the mayo. Make your own pimento cheese or buy it pre-made from the store.

Things In My Kitchen:
- Bread knife - There are plenty of big, bad, bread knives out there. 8-9"is enough length. Victorinox is a solid brand for knives and the ergonomic handle is a bonus.
