Simple and Easy Coleslaw

This easy and simple classic coleslaw recipe is made by combining cabbage and carrots with a wee bit of sugar, mayonnaise, and apple cider vinegar dressing.

Coleslaw tastes best when it's had time to sit for a couple hours in the refrigerator. This allows all the flavors to combine.

Put this simple and easy coleslaw recipe on top of pulled pork or chicken sandwiches or eat it as a side dish with easy BBQ Ribs.  

Serve coleslaw cold. It is also a fantastic picnic or potluck side dish.

Crunchy Coleslaw Vs. Wilted Coleslaw

Some people have such an aversion to different textures and prefer to eat coleslaw crunchy. If this is you, eat the coleslaw immediately after mixing in the dressing.

BUT, the traditional way to make coleslaw is to let it sit a couple hours or longer in the refrigerator.

Coleslaw will be wilted, marinated, and uber flavorful after a day of sitting in the fridge. It will also breakdown and become somewhat creamy depending on how much mayonnaise is used.

Therefore, this simple and easy coleslaw recipe is perfect to make ahead of time because it gets better with age!

Cole Slaw vs. Coleslaw

They are the same thing, just different ways of spelling.

Both are cold salads based on grated or chunked cabbage mixed with shredded carrots and a basic dressing of mayonnaise and vinegar.

How To Make Coleslaw Easier

Don't want to chop / shred the cabbage or carrots? 

Cool. Grab a bag of packaged and already chopped cole slaw from the grocery store. Prepackaged coleslaw is generally sold in the refrigerated produce section of most grocery stores.

What is coleslaw dressing made of?

Coleslaw dressing is made by combining mayonnaise, with a little vinegar, salt, and pepper. A little sweetener like sugar is added as well. Sometimes, I omit the sugar altogether. Coles slaw dressing is easy to make.

How do you shred carrots for coleslaw

Carrots for coleslaw can be shred by throwing the carrots into the food processor with the grating attachment (see video) or by using a box / cheese grater.

Can coleslaw be made without mayonnaise?

For sure! Try it with a little yogurt if you don't like mayonnaise. Try just olive oil if going for a dairy free vegetarian coleslaw.

Serving Suggestion

Serve this Cole Slaw dish as a side for ribs (yum!) or roasted chicken, or with a complementary salad potato or shrimp recipe.

This basic cole slaw recipe is made by combining crispy cabbage and carrots with a wee bit of sugar, mayo, and apple cider vinegar and letting it sit to allow the flavors to combine.

Ingredients

  • 1 head (~1 ½ lb) Napa or regular cabbage, roughly chopped or sliced
  • 4 carrots (~ 6 ounces), grated
  • 1-2 tablespoon sugar, depending on how much you like sweetness
  • 2 tablespoon apple cider vinegar (or any other acid / vinegar)
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅔ cup mayonnaise (or vegenaise for vegans)

Instructions

  • Combine all ingredients in a large bowl and toss to distribute ingredients.  Add more mayonnaise and salt to taste.
  • You can eat it straight away but it will taste better if it has a couple hours to sit.  Good for 3-4 days in the refrigerator.  Happy Eating!  Beckie
