Eggs in Pork Green Chile

Jump to Recipe

Remember My Mama's Pork Green Chile recipe from last week?  It tastes better the next day and the next day, especially for breakfast with an egg.

2 wood bowls with one bright yellow poached egg and pork green chile in each bowl. Also in each bowl are sliced radishes, sour cream, yellow cheese, and cilantro leaves. this …

There is something so comforting about an egg poached or baked in leftover sauce and especially if you get to eat it straight out of the pan.

If you don't want to make Pork Green Chili, you can also buy it already made.  Thrive (affiliate link) sells an affordable vegetarian green chili. The video shows you both how to poach the egg and make the green chile stew if you want to make your own.

Things In My Kitchen:

  • 7" Fry Pan - my "go-to" fry pan for 1-2 eggs.  It's small, has a silicone handle, non-stick and is heavy duty.  Not the cheapest little pan, but it will last a long time.

  • 1 cup canned or Homemade Green Chile
  • 1 Egg
  • 1 8" tortilla, corn or wheat

Instructions

  • Place a cup (or preferred amount) of pork green chile in a small pan and bring to boil.  Reduce heat to a simmer and make an area for where you gonna crack the egg in the middle of the pan.
  • Crack the egg and spoon over some of the hot green chile sauce over the white near the yolk.
  • Cover for ~ 3-4 minutes or until egg whites are cooked through or cook around 10 minutes uncovered if you still want the yolk to be vibrant yellow/orange.
  • Serve with warm flour tortilla and sliced avocados and a lovely cup of tea or coffee. Chillax with your amazing breakfast - it's gonna be a good day! - Beckie
