What is a Frittata?

A frittata is an Italian omelet with ingredients layered into the raw eggs while cooking. Conversely, a French omelet has ingredients folded into the cooked eggs after the eggs are done cooking. 

Another way to think of a frittata is as a crustless quiche with less dairy.

Frittatas are traditionally cooked on the stovetop in an oven safe pan and then transferred to the oven to finish cooking.

I skip the stovetop and bake this healthy vegetarian Mediterranean Frittata recipe directly in the oven.  It takes a little more time for it to bake, but is also a super easy recipe, especially if making breakfast/brunch for multiple people.

What To Serve with Baked Mediterranean Frittata?

Lighter "brunchy" type foods or appetizer recipes complement Mediterranean frittatas. Try:

  • salad
  • poached shrimp
  • pickled shrimp
  • gazpacho
  • cucumber soup
  • smoked salmon cucumber bites
  • pickled beets
  • hummus.

Ingredient Variations For Baked Mediterranean Frittata

Make this Mediterranean Frittata recipe work for you and your family. Frittata ingredients are versatile, but the cooking method remains the same.

Bake the frittata in the oven at 375F for around 30 minutes or until a toothpick runs clear.

The sliced potatoes in this mediterranean frittata recipe give it a little more bulk, texture, and substance. Don't like potatoes?  Leave them out or substitute a small sweet potato.

Don't like capers or olives? Cool - leave them out and / or add a couple extra tomatoes or any other favorite ingredients to this vegetarian frittata recipe.

Want a creamier or fluffier frittata? Add 3-4 tablespoon of heavy whipping cream or milk.

Like feta cheese?  Add a little more.  Don't like feta? Cool, add a different cheese.

Ingredient amounts in this healthy frittata recipe can be substituted to your preference. But remember that only so many ingredients can fit in a baking dish!

A basic frittata is made with eggs (and traditionally a couple Tablespoons of dairy if you like). Nearly any ingredients can go in a frittata: cooked onions, cooked peppers, arugula, broccoli, zucchini, Swiss cheese, colby jack, green onions, cooked meats like bacon or sausage.

Ingredients

  • 2 teaspoon olive oil
  • 1 medium yukon potato, peeled & sliced and par-boiled
  • 6 eggs, mixed
  • handful spinach
  • 10 cherry tomatoes, halved
  • 10 olives, sliced or halved
  • 1 tablespoon capers, drained
  • ¾ cup (~ 3 oz)  crumbled feta
  • ¼ teaspoon salt
  • pinch black pepper

Instructions

  • Preheat oven to 375F.
  • Grease a 8x8 (or similar) baking dish with olive oil.
  • Bring a medium pot of water to a boil and add sliced potatoes.  Cook ~ 6-8 minutes or until firm but done (remember you are going to bake it again so you want al dente).  Drain and set aside.
  • Mix the eggs and add a little salt and pepper.
  • In greased pan, layer the potatoes, spinach, tomatoes, olives, capers, and feta cheese. 
  • Add eggs on top of everything and gently push any ingredients sticking up into the eggs (it's ok if stuff is still sticking out, it will just get drier - see picture).
  • Place baking dish on a sheet pan in case your frittata fluffs up and spills over in your stove.
  • Bake at 375F for ~ 30 minutes or until set.  Broil in the last couple minutes (watching carefully that it don't burn) if you want the top a golden brown. 
  • Let cool and serve.  Happy eating!  Beckie

Notes

  • Don't like potatoes?  Leave 'em out or substitute a small sweet potato.
  • Like feta cheese?  Add a little more.  All the amounts can be substituted a little to your preference just depending on what your baking dish can hold.
  • Don't have or like feta?  Cool - substitute the cheese of your choice.

    We made this frittata for dinner last night and it was delicious! We switched out Yukon potatoes for russet and vegan mozzarella instead of feta and it turned out great. Next time we’re going to put some bacon in it!

    This was delicious. I added some mozzarella along with the feta. I think I'll add some mushroom the next time I make it as I will definitely be making it again. Thanks for sharing.
