Recipe Variations for Reuben Sandwiches
Pastrami - which is spicier and may be smoked - also works in a pinch if you can't find corned beef for your Reuben sandwich.
This recipe includes a homemade Thousand Islands dressing, but if you're not feeling it, then buy a bottle of Thousand Islands from the grocery store.
Any cheese will work. Try gruyere if you're fancy or a melty cheese like havarti.
I imagine this Reuben sandwich would be dang tasty for vegetarians if you substituted black bean burgers or quorn for the corned beef.

Ingredients
Ingredient List Sammie:
- 1 cup Thousand Island dressing (see recipe below) or buy some at the store
- 8 pieces rye bread
- ½ lb corned beef, sliced
- 8 slices swiss cheese
- 2 cups cold sauerkraut, drained & squeeze out any excess moisture
- unsalted butter for the outsides of the bread & for frying
Ingredient List Thousand Island Dressing: – makes ~1 ¼ cup
- 1 egg yolk only
- ¾ cup safflower oil
- 1 tablespoon lemon juice
- ¼ teaspoon salt
- pinch black pepper
- ½ teaspoon dijon mustard
- ⅓ cup sweet pickle relish
- ⅓ cup ketchup
Instructions
- If you are making the dressing: mix together the egg yolk, dijon mustard, lemon juice, sea salt, black pepper. Slowly add the safflower oil while mixing vigorously. When the “mayonnaise” has thickened add the pickle relish and the ketchup.
- Lay out the bread and butter one side of each slice.
- On the other side of the bread, slather on the thousand island dressing. Layer a couple slices of corned beef, add the sauerkraut and then a slice or two of swiss cheese.
- Top with the second piece of bread (buttered sides of bread should be out).
- Preheat a pan on medium heat (we prefer a cast iron skillet
) and add a touch of butter to lightly coat the pan. When the pan is hot add the sandwiches.
- Cook covered for ~ 3-5 minutes on each side until golden brown (make sure not to burn your bread).
- Dip it in any extra thousand islands. Happy Eating! Beckie
