Hello easy cold apple salad recipe. This cold salad is perfect as a side dish or for a picnic or potluck.

Easy and Fast Lemon and Olive Oil Dressing

Lemon and olive oil are a delicious, versatile, and simple salad dressing for apple, celery, and walnut salad. Simply toss the ingredients in a small jar and shake like mad. Salad dressing is done.

Bonus: fresh lemon juice keeps the diced apples from turning brown while also giving the apple and celery salad zing.

Ingredient Substitutions for Apple, Celery, Walnut Salad

This apple salad with celery and walnuts is a healthier version of the famous Waldorf Salad (made without grapes or mayonnaise).

Having said that, feel free to change up this versatile apple and celery salad and add or change your favorite ingredients. Some ideas include:

  • mayonnaise instead of lemon and oil salad dressing
  • grapes or craisins instead of raisins
  • almonds or pecans instead of walnuts
  • sliced fennel bulb
  • feta cheese
  • cooked chicken

Time Saving Tips For Easy Apple Celery Salad

In a hurry or don't want to turn the oven on?  Skip toasting the walnuts and just throw them in the apple salad un toasted.

Use your favorite store bought salad dressing if you don't want to make the lemon vinaigrette included in this recipe.

Ingredients

  • 2 medium apples, diced
  • 3 stalks celery, diced
  • ¼ cup raisins
  • ½ cup walnuts, toasted and chopped
  • 2 tablespoon lemon juice
  • 2 tablespoon extra virgin olive oil
  • ½ teaspoon salt
  • pinch black pepper

Instructions

  • Preheat oven to 350F.   Toast chopped walnuts on an aluminum lined baking sheet for ~5-7 minutes or until fragrant.  Walnuts are hard to tell when they’re done, so go by smell.  It’s done if it’s fragrant.
  • Add the lemon juice, olive oil, salt and pepper to a jar and shake.
  • Mix together all ingredients in a large bowl.  Add salt to taste.  Happy Eating!  Beckie
